Cook the lineIn working kitchens.

Restaurants, line cooking, pastry, and the business of food. One apprentice paired with one chef, learning the craft inside the room where the food is actually served.

Apprenticeship. Kitchen craft.

Three pillarsWhat you learn.

The line.

Stations, fire, plating, breakdown. The full rhythm of service learned in working kitchens at working pace.

The plate.

Technique, prep, pastry, butchery, the discipline of mise en place. Hands on every part of the menu.

The business.

Costing, sourcing, menu design, front-of-house, P&L. The other half of the kitchen that decides if it survives.

The pathHow it works.

  1. Tell us the city and the kitchen you want to be in.

Twenty-minute interview. We listen for the food, the role, and the rhythm you want to live inside.

  2. We pair you with a chef in your market.

A working chef in a real restaurant takes one apprentice. Curriculum is shaped around their workflow.

  3. You learn by cooking the line.

Prep, service, breakdown, repeat. The mentor signs off when you can run your station unaided.

Ready to cook.

Tell us the city and the kitchen. We'll route you to the chef.

Twenty-minute interview. Honest fit, real costs, an actual mentor in a real working restaurant.
